This mildly spicy spice blend with an amazing richness of flavors is traditionally used with meats such as lamb, goat, pork, but it is also delicious in rice. It is in powder form.
This blend is what gives its name to the dish it is part of. Simply sprinkle it into your preparation halfway through the cooking time to avoid overpowering the flavor by cooking it too long. Use to your taste, about a heaping teaspoon for a dish serving 5 people, or more if you prefer. Mix well and taste before adding more.

The massalé is a Réunionese spice blend inspired by Indian curry, which is why they have such a family resemblance! Over the centuries, it was the movement of populations that brought Indian curry to Réunion, where the locals adopted it and modified it to their taste (just as the Caribbean people did with colombo). They made it perhaps even more subtle in taste than the curries and less spicy as well. There are almost as many variations of massalé as there are Réunionese people, because, like Indian curries, everyone has their own version...! Here, there's a hint of salt added to make the blend even more attractive.
