In France, the preparation called "guacamole" is made by mashing avocado and adding a more or less spicy blend of spices. However, in Cuba, "guacamole" refers to an avocado and pineapple salad cut into small cubes and dressed with a vinaigrette made from olive oil.
This spice blend, specially designed, is perfect when paired with the flesh of an avocado for an appetizer or summer starter. But feel free to use it to flavor other dishes, like mayonnaise to dip with raw vegetables (carrot sticks, fennel branches, cauliflower pieces, etc.).
Made in no time, here's a simple "guacamole" recipe, easy as pie...!
Recipe for 4 people: 2 avocados, 2 tomatoes, salt, juice of 1/2 lemon, and guacamole blend (1/2 to 1 teaspoon depending on taste).
Peel the avocados. Using a fork, mash the avocado flesh into a paste. In a bowl, mix this paste with the tomatoes. Add salt to taste, quickly add the lemon juice (to prevent the avocado from browning), and stir in the spice blend. If you like, you can also add 1/2 fresh onion finely chopped. This preparation will be perfect to enjoy with chips, nachos, or other savory or sweet biscuits.
Guacamole is a Mexican culinary preparation made primarily from avocado flesh, with added chili, coriander, onions, tomatoes, lemon juice, and spices.
But two other preparations are very close to this guacamole sauce: "dip," and the Venezuelan "quasacaca," which is not spicy. In fact, it is with the latter that many empanadas are made.
