A fajita is actually a type of small pancake, typically made from cornmeal, but sometimes from wheat flour, a typical dish in Mexican cuisine. It is folded after being filled with meat (usually chicken, but also beef or pork) and various vegetables: peppers, onions, as well as tomatoes, lettuce, or avocado. A sauce, often made simply from sour cream, is added.
Endless variations are possible, especially by replacing the meat with shelled shrimp.
If you can't find the famous small pancakes in stores, you can make the same dish to be served simply on a plate with the cream on the side.
Simple fajita recipe:To make this exotic, simple, and quick dish that you can prepare in advance with many variations, you will need for 4 to 5 people:
Cut the tomatoes and lettuce into small cubes separately, and the chicken, peppers, and onions into small strips. Set aside the tomato and lettuce cubes. Cook the pepper strips, onion strips, and chicken strips separately over low heat. When the chicken strips are cooked, add the lemon juice. Salt and pepper each element (add cayenne pepper if desired, but carefully!). Mix the chicken with the cooked onions and peppers. Season your dish to taste with this blend (1 or 2 heaping teaspoons for this recipe). Mix well and remove from heat. Reheat the mixture when serving. Fill the fajitas at the last moment with the sour cream spread over the pancake, add some tomato and lettuce cubes, and a portion of your mixture that you had previously reheated. All that's left is to roll the fajita and..... enjoy! |
