This blend is a fine ochre powder and is probably one of my most magical creations to accompany fish, shellfish, and even certain vegetables. It will quickly become indispensable!
The Pondicherry blend is fragrant, mildly aniseed, and not spicy, as it contains no chili! It will enhance your fish en papillote or pan-seared fillets, or even a sauce that you simply drizzle over fish cooked in broth. You can also sprinkle it on scallops seared for just 1 or 2 minutes in a drizzle of olive oil, or on marinière mussels.
It will be delicious in a mussel rice or shrimp rice.
It will even brighten up certain vegetables, like salsify or cooked fennel.
