Uses in Cooking:

This unusual little berry, recently introduced from its native Ethiopia, is incredibly aromatic. Its taste and fragrance closely resemble the fruit from which it takes its name, and that's what makes it so remarkable!

To use it effectively, you can crush it with a mortar, blend it into your preparation, or simply infuse it in a liquid (water, milk, lemon juice, fruit juice, vinegar, etc.) after lightly crushing it, for example, with a bottle. Personally, I prefer the infusion method, as this leaves no residue in the dish and allows you to precisely control the flavor intensity.

Its pronounced fruity taste makes it ideal for sweet dishes:

  • In most desserts: cakes, pies, creams, compotes, etc., alongside spices like vanilla, cinnamon, Tonka bean, etc.
  • For making homemade aperitifs or digestifs, like punch, spiced rum, sangria, mulled wine, or fruit juices.
  • In infusions such as tea or herbal teas (with verbena, for example). In Ethiopia, it is widely used to flavor coffee.

However, passion berries can also be surprisingly good in savory dishes:

  • Fish (salmon, trout, white fish, etc.): You can infuse the berries in citrus juice or cream to drizzle over the fish.
  • Shellfish like oysters or clams: Infuse them in lemon juice or a mild vinegar to enhance the flavor.
  • Salads (possibly with citrus fruits): Infuse the berries in the dressing ahead of time.
  • Even in soups, such as carrot or pumpkin soups.

Passion berry oil is also used to scent perfumes and soaps.

In the Mediterranean region, it is frequently used as a medicinal plant due to its numerous properties.

Who am I?

Scientific name: Ruta chalepensis

Origin: Ethiopia

Other names: Chalep rue, Aleppo rue, Broad-leaved rue

This flowering plant from the Rutaceae family originates from Eurasia and North Africa, growing to about 60 cm in height. Its foliage is evergreen and finely divided. Its bright yellow flowers have 4 or 5 petals.

Native to the Mediterranean region and the Canary Islands, this plant has been widely introduced to various countries from Africa to Mexico, India, and Vietnam.

The leaves are also widely consumed around the world for multiple uses. However, like many plants and spices, it should be used in moderation, as it can be toxic in large doses. The plant contains coumarin, which can cause dermatitis in allergic individuals with prolonged contact. It is also highly discouraged for pregnant women due to its abortive properties.
