Description:
Hypocras is a medieval drink made from sweetened wine and spices. The origin of the name, which appears at the end of the 14th century, is somewhat unclear. Originally, hypocras was sweetened with honey; here I offer a recipe using sugar, but nothing stops you from continuing the tradition by using honey! The addition of sugar makes the drink pleasant but also allows for a longer preservation, even for several years. The recommended addition of alcohol serves the same purpose.
Hypocras can be enjoyed both as an aperitif and a digestif, and there are many different recipes, as each person created their own version. This drink was highly prized throughout the Middle Ages and was served at most banquets. It is said that Louis XIV was quite fond of it.
It is believed that the heavy use of spices, which were very expensive at the time, was mainly to improve the taste of wine, which probably resembled vinegar more than the fine wines we know today! Of course, only the wealthy could afford the necessary spices. This trend naturally coincided with the discovery of America, India, and their wealth of spices!

Here it is in detail:
Pour the spices into a large jar with 25cl of 40° brandy.
Seal and let it macerate for 8 days, then add 1 liter of white or red wine (both are excellent) and 200g of brown sugar.
Stir and let it sit for another 3 days. Remove the spices and bottle the drink.
Of course, enjoy in moderation, even though it's delicious!
